Biscuits and Bars Recipes

Anzac Biscuits - double quantities
Beat 1 egg with pinch of salt
3/4 cup shakkar or raw sugar or 1/3 cup honey
Melt 1 tab butter
1 tab cocoa (O blood type - carob) 1 tab boiling water, and add to mix above
Stir in 1 cup coconut (for O blood type, substitute sesame seeds)
1 large cup rolled oats (grind half into flour in blender). Place small teaspoonfuls on tray and flatten with a fork. Cook 30 mins in a moderate oven. 150 degrees. To make a softer biscuit add a tab of yogurt.

Chocolate Fudge Brownie
Melt 200gr butter
add 1 1/2 cup shakkar, bring to boil
add 1/2 cup cocoa or carob or 50/50 and pinch of Celtic salt and take off heat
add 2 beaten eggs
stir in 1 cup of flour (barley, buckwheat or oat) and 1/2 cup coconut. Pour in shallow tin. Bake 25 mins @ 180 degrees. Cut in squares when cool.


Coconut Balls
Mix in a bowl 1/4 cup carob or cocoa powder (or much less)
1/2 cup coconut
1/2 cup sesame seeds (toast first if you can be bothered)
2 tabs fructose, shakkar or honey
4 tabs tahini (approx)
Add 1 or 2 tabs water to blend it (If it gets too wet add some milk powder or ground seeds)
Make even size balls on a spoon. Leave as is or you can roll in coconut or toasted sesame seeds.

Ginger Biscuits - Quinoa flour
Melt 1/4 packet butter (1/2 cup)
Add 1/2 cup sugar
Sift 2 1/2 cups flour (say use 1 cup of tapioca starch)
2 teaspoons ginger
1 teaspoons cinnamon
1 teaspoon mixed spice
Dissolve 1 teaspoon baking soda in 1 tab hot water
Then add golden syrup, water, or egg to get it to bind enough.
Put spoonfuls on tray, flatten with fork and bake 10-15 mins at 175 degrees

Jeannine's Truffles - very rich
Melt together
100g butter
3/4 cup sugar / shakkar
1/3 cup milk

Pour onto
1 cup milk powder
4 tabs cocoa (1/3 cup) or carob powder
1 teaspoon vanilla /rum essence/baileys
Mix and put in fridge/freezer till set. Then roll into balls and toss in coconut. Keep in freezer.
(I added 1/2 cup of ground almonds to make a firmer mix.)

Shannon’s Famous Peanut Butter Cookies (Suits A-type blood group)
Beat 1 cup organic crunchy peanut butter (can use part tahini)
With 1/2 cup castor sugar/fructose/shakkar or stevia as directed
Add one beaten egg
Work in 3/4 cup chocolate or carob chips (mixture will be very stiff)
Roll tablespoonfuls of mix into balls. Place on a well-greased baking tray. Flatten firmly with a fork. Bake at 180 degrees for 15-18 mins until cooked and lightly browned.

Tramping Bars - I made this up for O-type Blood groups, free of coconut
In Blender grind 2 cups of organic un hulled sesame seeds
2-3 tabs of carob powder
1/2 cup vegetarian protein powder or chopped sunflower seeds
In bowl and add 3-4 tabs treacle
3-4 Tabs tahini and a little hot water to get a sticky consistency
Roll into logs and coat in toasted sesame seeds, wrap in glad wrap and freeze till use.
Or flatten in a slice tin and refrigerate before cutting in squares.
