Dinner Recipes

Asparagus Frittata
In heavy based pan heat
1 Tab organic olive or avocado oil
Saute 1 bunch asparagus sliced (250g)
1 large onion, finely chopped
2 rashers of lean bacon chopped
Place in a well greased 25cm baking dish.
Beat 8 eggs and pour over asparagus.
Sprinkle with grated cheese – optional.
Bake at 200°c for 20 mins until set and golden brown.

Savoury Oat Patties
Great with pumpkin soup
Mix in a bowl
1 cup oats
1 teas baking powder
1/2 teas curry powder
1/2 teas ginger
Pepper
1/2 finely chopped onion, spring onion or chives
(flavour with parsley and whole grain mustard, or sun dried tomatoes and basil)
1 egg
1 tab sugar (shakkar)
1 tab olive/avocado oil
Add milk or water to get a batter consistency.

Fry spoonfuls in buttered pan till both sides are golden brown.

Three C salad
Cut a broccoli into 1 cm cubes
Cut a red, orange and yellow capsicum into 1/2 cm cubes
In pan, heat extra virgin olive oil
Add 1 tab curry powder
Stir in 1 cup of cashew pieces (don’t answer the phone – it must not burn!)
When cashews are slightly golden
Add broccoli and stir in to take on curry flavour
Add capsicum pieces
When all sautéed lift off heat
Mix mayonnaise with 2 tabs balsamic vinegar and add while it is still warm.
Refrigerate (can be made the day before).
