Muffin Recipes

Unknown Oat Muffins

In a bowl mix
1 1/2 cup coconut
1 1/2 cup oat flour (blend up your own from organic rolled oats)
1 1/2 teaspoons of Baking Soda
Add 1/4 cup of golden syrup
3/4 cup milk/soy milk/water
1 egg
Mix and pour into greased muffin pans

Chocolate Muffins

Double quantities.
Sift 2 cups barley/buckwheat flour
2 heaped teaspoon baking powder (alum free)
3 Tabs cocoa or carob powder
Add 1 1/2 cups coconut (approx)
1 1/2 cups milk
1 tab oil (olive or avocado)
1 teaspoon vanilla
Melt 225gr butter with
1 cup shakkar, sugar or 4 tabs honey
3 tabs golden syrup to make it stick
Mix all together and put in greased muffin trays, 10-15 mins, 155 degrees.
Grain Free Muffins

In a bowl mix
1 1/2 C LSA (Linseed, Sunflower, Almond. LSA packet has a recipe on it too)
1 1/2 C ground un hulled Sesame seeds
2 t (aluminium free) baking powder
Separate and beat 6 eggs
Add 1 C of Shakkar/sugar
1 rind and juice of a lemon
Mix altogether, in muffin tins and fan bake in a moderate oven.

Esther's Famous Bran Muffins

Preheat oven to 375 degrees and mix
1 Cup Organic Wholemeal Flour (e.g. Barley, Quinoa or Buckwheat/Tapioca)
1 teaspoon of Baking soda
1 teaspoon of Baking Powder (aluminium free)
3/4 cup water
2 cups of bran
1/2 cup of Golden Syrup
Melt 2 tablespoons of butter
Place in greased muffin trays. Bake 15-20 mins.

The above quantities make only one dozen muffins so you may like to double it and freeze some.
